  • Heat oven to 350ºF.
  • Beat pudding mix and milk in large bowl with whisk 2 min. Whisk in granulated sugar, eggs, zest and juice until blended. Add bread; stir to evenly coat. Gently stir in blueberries.
  • Spoon into 9-inch square baking dish sprayed with cooking spray.
  • Bake 40 min. or until center is set and top is golden brown. Let stand 10 min. Sprinkle with powdered sugar just before serving; top with COOL WHIP.

How to Peel a Lemon

To remove the peel from a lemon, use a vegetable peeler to remove long strips of peel, then chop the peel with a sharp knife as desired. Or, pull a zester over the surface of the lemon to get strips of peel, then use whole or chop as desired. Place any extra peel in a freezer-weight resealable plastic bag, seal and store in the freezer for up to 2 months.

Lemon Juice Yield

One medium lemon yields about 3 Tbsp. juice. To get the most juice from lemons and other citrus fruits, bring the fruit to room temperature. Use your palm to gently press and roll the fruit on the countertop a few times to release the juices inside before squeezing.
