Blueberries are among the fruits that are high in antioxidants, which can prevent cell damage and have other potential health-promoting properties. As a bonus, blueberries are also rich in vitamin C and a good source of fiber.
To remove the peel from a lemon, use a vegetable peeler to remove long strips of peel, then chop the peel with a sharp knife as desired. Or, pull a zester over the surface of the lemon to get strips of peel, then use whole or chop as desired. Place any extra peel in a freezer-weight resealable plastic bag, seal and store in the freezer for up to 2 months.
One medium lemon yields about 3 Tbsp. juice. To get the most juice from lemons and other citrus fruits, bring the fruit to room temperature. Use your palm to gently press and roll the fruit on the countertop a few times to release the juices inside before squeezing.
