  • Mix cracker crumbs and butter in 9-inch pie plate; press onto bottom and up side of pie plate.
  • Beat cream cheese, sugar, milk and juice in medium bowl with mixer until well blended. Gently stir in COOL WHIP. Spread onto bottom of crust; top with blueberries.
  • Refrigerate 30 min.

This recipe is extremely easy to make (especially if you purchase a ready made pie crust) and has a wonderful flavor. I had a problem the first time I made it. As a few other people have mentioned, it was terribly runny. Even after being in the freezer for an hour, we still had to scoop it out with a spoon and eat it out of bowls. I made it again today, leaving the milk out completely, and it was perfect. I used fresh lemon juice and added the zest of two lemons which I thought made it especially good.

However, I made it in a glass pie plate and it was still way too soft after more than double the recipe-prescribed chilling time. Next time I would probably put it in the freezer, and/or put it in a metal pie plate, or make it the night/many hours before.

I discovered you have toi follow the directions though and fold in the cool whip after all else has been beaten. This way you avoid the "cottage cheese" texture! It looked gross but tasted great!

I used brummel & brown instead of butter in the crust and no one could tell the difference. used almond milk and next time will only use half the amount so it will be a little more firm.
