  • Preheat oven to 350°F. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg and orange peel; beat until well blended. Add flour and baking powder; mix well. Gently stir in cereal.
  • Drop level tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
  • Bake 10 to 12 min. or until lightly browned. Cool on baking sheet 2 min. before removing to wire racks to cool completely. Store in tightly covered container at room temperature.

Variation

Prepare as directed, reducing brown sugar to 1-1/4 cups and using maple-pecan whole grain cereal flakes.

    Yummy...a nice light and refreshingly different kind of cookie. Love it's lacey chewy crunch. Will add a little more orange next time and would love to have a few more berries in the cereal. Will definitely make again.

    This chewy cookie was a nice variation from the standard. One variety I made was I used lemon rind instead of orange, since my husband doesn't care for orange flavored foods. It was refreshing!
