  • Bring all ingredients except pasta to boil in Dutch oven or large deep skillet on medium-high heat, stirring occasionally.
  • Simmer on medium-low heat 15 to 20 min. or until crumbles are heated through (160ºF) and carrots are crisp-tender, stirring occasionally. Meanwhile, cook pasta as directed on package, omitting salt.
  • Drain pasta. Stir into soup.

Substitute

Substitute elbow macaroni for the farfalle.

Special Extra

Rated 5 out of 5 by from Okay... Okay... so I kinda cheated and had looked online for some other minestrone recipes, but I liked that this took less time and was easier to make. I took the time to chop up some extra veggies like celery and a green pepper. I also used turkey sausage instead of boca. :) All in all my hubby and I liked it... and after much encouragement my kids ate it and kinda liked it. I think they might be a little souped out... yum yum.

I used chicken broth instead of water and regular sausage because I couldn't find the BOCA in my store. The soup was really good. And very easy. It does make a lot so unless you're planning on eating it for several days, you should cut the recipe in half.

I used chicken stock instead of water for xtra flavor and turkey sausage since I couldn't find the Boca in my area. I'll make it again.
