  • Heat oil in medium nonstick skillet on medium-high heat. Add potatoes; cook 8 to 10 min. or until browned, stirring occasionally. Spread potatoes to evenly cover bottom of skillet.
  • Combine egg product, link pieces and onions; pour over potatoes. Cover. Simmer on medium-low heat 12 min. or until center is set. Remove from heat.
  • Top with cheese.

I make similar recipes for myself and end up having to cut down the ingredients for only one person. Sometimes I use salsa with it or add additional vegetables to my liking if I have them available. Good for a light evening meal as well with an English Muffin. It's quick and easy and you can add things to change the taste.

Rated 4 out of 5 by from i used regular sausage links. i used regular sausage links. i also added broccoli and i put some bacon slices fanned out on the top. also...i couldn't find shredded potatoes at my local market so i bought hashbrowns and used them, they worked out fine.

The egg didn't cook evenly, so I eventually just scrambled everything making a "breakfast stir fry". That still tasted good. Although it needs a bit more seasoning. Have salt and pepper ready!!
