  • Mix vinegar and dressing mix until well blended. Pour over meat in medium bowl; stir to coat. Cover. Refrigerate 20 min.
  • Add meat and peppers to hot oil in medium saucepan. Cook on medium-high heat 5 min., stirring frequently. Add salsa and broth; mix well. Bring to boil.
  • Reduce heat to medium; simmer 20 min. or until meat is cooked through and stew is thickened, stirring occasionally. Serve with hot cooked rice, if desired.

Special Extra

For a fun serving bowl, cut a circle from top of 4-lb. pumpkin, about 3 inches from stem, to form a lid. Clean out inside of pumpkin; discard pulp and seeds. Replace lid. Rub outside of pumpkin with oil. Bake at 375°F for 50 minutes or until flesh is tender but outside is still firm. Fill with hot stew just before serving.

I used a Good Seasons Italian Dressing mix because that is what I had on hand. I also used diced tomatoes with basil, garlic and oregano instead of the salsa. I added a couple slices of onion and cooked those with the peppers and beef. I also added half a bag of frozen mixed veggies. I wanted the stew to thicken a bit faster so I added 2 T of tomato paste. I served this over brown rice. Very tasty and reminded me of Panamanian bistec picado.

I cooked this last night for dinner, I took someone elses idea and used diced tomato with basil garlic and oregano, added onions with the peppers, and added 2T of tomato paste it came out amazing!! And I used the whole can of beef broth as well. I cooked it for about 2 hours on the stove low, and it thickened and came out wonderful!!

Instead of salsa I added a can of diced tomatoes with onions and pepers. and I used a whole can of beef broth instead of 1 cup and added some water and 1/2 cup of cooking wine. Put it in a pan and cooked it slowly. The meat came out tender and tasted great!

I used a Good Seasons Italian Dressing mix and one green and one red pepper because that is what I had on hand. I added minced fresh garlic and chopped onion.Delicious! Very light and healthy dinner.
