Tapioca flour, also known as tapioca starch, is extracted from the root of a cassava plant. Look for it in the gluten-free or specialty flour section of your grocery store.
The bread batter can be prepared ahead of time. Refrigerate up to 1 week before spooning into prepared muffin pan cups and baking as directed. If baking in batches, spoon 1/3 of the batter evenly into 12 prepared mini muffin pan cups before baking as directed.
