  • Place cracker crumbs in pie plate. Brush fish with 3 Tbsp. mayo. Dip fish in crumbs, turning to evenly coat both sides of each fillet. Mix remaining mayo and jalapeños.
  • Heat 2 Tbsp. oil in large skillet on medium-high heat. Add fish, in batches; cook 3 min. on each side or until fish is golden brown on both sides and flakes easily with fork. Remove from skillet; cover to keep warm. Meanwhile, combine remaining oil with remaining ingredients.
  • Top fish with mayo mixture. Serve with bean mixture.

I must admit, I didn't use the Ritz cracker breading, I thought it might be too sweet, so I used pita bread crackers and put them thru the coffee grinder. I didn't have a can of black beans but had some dry black beans, so I cooked them and since I didn't quite understand all of the recipe, I combined the beans with the mayo, the tomatoes, the green onions and jelapano peppers. This combo took the beans to another level! In fact, I combined all the beans with this mixture and will have it as a side with my eggs tomorrow morning!!! I had some left over potato salad that I used also as a side. What a great meal!!!

A friend told me to dip in beaten eggwhites instead of mayo and spray with oil and bake in oven to save on calories. I layed fish on black bean salsa and topped with mayo and chopped banana peppers. This will definitely be one of our weekly fish meals.

Rated 5 out of 5 by from I really enjoyed this recipe. I really enjoyed this recipe. I mistakenly bought Swai fish instead of Tilipia but it was a winner in my house. I thought it would be bland for the lack of seasoning but it was wonderful. My children liked it so it's a definite keeper.
