Tear the leftover lettuce from iceberg lettuce head into bite-size pieces. Keep it fresh and crisp by packing it in a resealable plastic bag or airtight container along with a dampened paper towel. Then, refrigerate until ready to use.

Place a whole head of iceberg lettuce, core-side up, on cutting board. Cut a 1-1/4-inch-thick slice off right side of lettuce. Then, cut a second slice off left side.
