  • Bring milk, cocoa powder and butter to boil in large saucepan sprayed with cooking spray on medium heat, stirring constantly. Simmer on medium-low heat 10 to 15 min. or until thickened, stirring constantly. (Thickened mixture should pull away from side of pan when tilted.) Remove from heat.
  • Stir in nuts and vanilla; pour into shallow dish sprayed with cooking spray.
  • Refrigerate 1 hour or until firm.
  • Roll chocolate mixture into 4 doz. (1-inch) balls. Place coconut in pie plate. Add chocolate balls, in small batches, to coconut; roll until evenly coated on all sides.

Prepare using canned low-fat sweetened condensed milk.

Tint or toast the coconut before using. To tint the coconut, spread the coconut onto bottom of shallow pan. Bake in 350°F oven 7 to 10 min. or until lightly browned, stirring frequently. Or, spread onto bottom of microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as the coconut can easily burn. Or to tint the coconut, mix 1/2 tsp. water with a few drops of food coloring. Add to the coconut in a resealable plastic bag; seal bag. Shake until coconut is evenly tinted. Use more food coloring for a darker shade and less coloring for a lighter shade.

Variation

Omit the coconut, and increase the nut measure to 1-1/2 cups. Prepare recipe as directed, except do not stir the nuts into the chocolate mixture before rolling into balls. Roll the chocolate balls, in small batches, in the nuts until evenly coated on all sides.

Variation

Omit the nuts, and reduce the coconut to 1/2 cup. Instead roll the chocolate balls in one of the following coatings: 1/2 cup each nuts, coconut and chocolate sprinkles.
