Prepare using boneless pork chops, decreasing the grilling time if necessary.
For the best grilled pork chops, use chops that are at least 3/4-inch thick and grill to an internal temperature of 160°F. Test for doneness by inserting an instant-read thermometer, at a slight angle, into the center of each chop.
To prevent food from sticking to the grill, lightly brush the grill grate with vegetable oil before preheating the grill. Or, spray the cold grill grate with cooking spray.
For the juiciest, most flavorful grilled meat, always use long-handled grill tongs or a metal spatula to turn or move meat pieces on the grill. Piercing the meat with a fork causes the juices to escape, resulting in less flavorful meat.
