Broccoli and Cheddar Cheese Soup

It may sound unlikely, but steaming cheesy broccoli soup that nourishes the senses can be part of your smart eating plan. And it's a delicious way to warm up a cool night.

What You Need

onion, chopped

Tbsp. KRAFT Lite House Italian Dressing

can (10-1/2 oz.) condensed chicken broth

broth cans water

cups chopped broccoli

cup fat-free milk

1/2

cup instant white rice, uncooked

cup KRAFT 2% Milk Cheddar Cheese

Make It

COOK onions in dressing in large saucepan until crisp-tender.

ADD broth, water and broccoli; stir. Bring to boil; cook 8 to 10 min. or until broccoli is tender. Stir in milk and rice; simmer on medium heat 5 min.

POUR into blender in batches; blend until smooth. Return to saucepan; cook on low heat until heated through, stirring frequently. Serve topped with cheese.

Thought this was a great broccoli soup base to "Make it your own!" I added extra rice to thicken it up, vegetable broth instead of chicken, seasoned salt and pepper. Topped it with cheddar cheese and sour cream. It was really good. Thanks!!!

Me and my husband made this and we loved it ... altho it didn't say to we had to add sea salt, fresh ground pepper and a couple of 1/2 slices of velveta cheese. other than that it was great, we made another batch 2 days later ... will def. make this again, and again and again :)

The soup was great and nourishing! I had to add some spices we like. My 12 years old loved it and I am making today again.

This soup had no flavor at all. The time it took to cook and the mess to clean up was a big waste of time. I ate one bowl adding salt, pepper and crackers to give it a little flavor but the rest went down the garbage disposal. I don't know anything I could have done at that point to make it any better. I would never recommend this recipe to anyone. It does not even deserve one star.

I followed the directions to a T and was not very impressed. Soup was too watery and tasteless. I tried to "doctor" it up but, did not good. Will not make again.
