  • Cook onions in dressing in large saucepan until crisp-tender.
  • Add broth, water and broccoli; stir. Bring to boil; cook 8 to 10 min. or until broccoli is tender. Stir in milk and rice; simmer on medium heat 5 min.
  • Pour into blender in batches; blend until smooth. Return to saucepan; cook on low heat until heated through, stirring frequently. Serve topped with cheese.


Substitute cauliflower for the broccoli.

    Thought this was a great broccoli soup base to "Make it your own!" I added extra rice to thicken it up, vegetable broth instead of chicken, seasoned salt and pepper. Topped it with cheddar cheese and sour cream. It was really good. Thanks!!!

    Me and my husband made this and we loved it ... altho it didn't say to we had to add sea salt, fresh ground pepper and a couple of 1/2 slices of velveta cheese. other than that it was great, we made another batch 2 days later ... will def. make this again, and again and again :)
