  • Heat oven to 400ºF.
  • Place chicken, smooth sides down, on work surface; top with broccoli, cheese and bacon.
  • Roll up each chicken thigh tightly, starting at one short end; secure with wooden toothpicks. Roll in coating mix until evenly coated. Place, seam-sides down, in single layer in shallow foil-lined pan.
  • Bake 25 to 30 min. or until chicken is done (165ºF). Remove and discard toothpicks before serving.

Serving Suggestion

Serve with a mixed green salad and hot mashed potatoes.

How to Cook Bacon in Microwave

Place bacon on double-layer of paper towels on microwaveable plate; top with another sheet of paper towel. Microwave on HIGH 3 to 3-1/2 min. or until bacon is crisp.

Rated 5 out of 5 by from This was a breeze to assemble. This was a breeze to assemble. Don't let the picture fool you. I made a little assembly line of ingredients and it went by quickly. I used fresh Brocoli insterad of frozen. I used the left over cheese, brocoli & bacon bits to sprinkle of the bundles during the last 2 mins. of cooking. I also used chicken breast and cut down the center to make thinner breasts out of, I got 2 bundles for the price of 1! Hubby said it looked fancy and daughter said it was great! Other mix in ideas might be to add sautee'd mushrooms, onions and bell peppers. I served this with mashed potatoes and a corn green bean mix! I LOVED this recipe and will make it a regular.

Rated 4 out of 5 by from This recipe is delicious. This recipe is delicious. I used chicken breast (easier to roll). I used thin strips of squash instead of broccoli and used ham instead of bacon. The taste was really good. My friends liked it very much. Try not to overdo the breadcrumbs on the chicken. I did and it took a little longer to cook since the outside didn't have that golden crispy color. I added extra cheese on top towards the end of the baking since the cheese inside melted out of the chicken. I served this with rice & beans. It was fun and actually really easy to prepare.

Rated 5 out of 5 by from This recipe is great! This recipe is great! The only thing different I did was instead of rolling them up i just folded the chicken over and secured it with toothpicks. I also put some Lawry's seasoning salt on them before I put them in the oven and I used the regular shake n' bake instead of the extra crispy. I made it for my whole family one night and everyone LOVED it. My brothers girlfriend asked for the recipe when she left. I would make it again and again!

Rated 4 out of 5 by from this dish was very tasty! this dish was very tasty! the only problem was it took a very long time to perpare and the toothpicks don't like to come out of the chicken at the end. also- i added dry ranch dressing mix to the shake and bake to add some flavor and the chicken coating was amazing. I also mixed sharp cheddar, colby, and jack cheese together instead of just using the cheddar and it was great! will def. make again!

Yes it was difficult to roll the chicken thighs so instead of rolling them, I just coated them with the shake n' bake and topped them with the cheese, bacon & broccoli mixture during the last 10 minutes of cooking. Very juicy and very tasty! Whoever thinks this recipe is dry...I dont know what chicken thighs you are using..but mine were extremely juicy.

Rated 4 out of 5 by from This was really good! This was really good! It took me awhile to do it because I took the skin off and the bone out of my chicken thighs myself. I might try it with boneless breasts next time. Just to save myself some time. Oh and not that the cheddar was bad, but I think it would be really good with a thin slice of velveeta cheese in the midde instead of the cheddar to make it creamier!

Rated 5 out of 5 by from This was excellent! This was excellent! My husband and 11 month old son were big fans. I did not pound out the thighs, but instead used them as they were and I was still able to roll them effectively. For anyone pressed for time, I would suggest making it as a bake and putting the broccoli, bacon and cheese on top towards the end of the baking time.

Rated 5 out of 5 by from This recipe was excellent! This recipe was excellent! Everything came together so well that EVERYONE loved it. (Even my picky sister that HATES shake 'n bake.) The only suggestion I have is to put the bacon on the chicken first since it is the smallest and has a tendency to fall off when wrapping. I'll definitely be making this again. Thanks Kraft!
