Broiled Caesar Salmon

Salmon steaks are infused with enticing flavors when marinated in lemon juice, olive oil, white wine and Caesar salad dressing mix before broiling.

What You Need

1/4

cup fresh lemon juice

1/4

cup olive oil

Tbsp. dry white wine

env. GOOD SEASONS Caesar Dressing Mix

salmon steaks (about 1 lb.)

Make It

MIX lemon juice, oil, wine and salad dressing mix until well blended.

RESERVE 1/4 cup of the dressing mixture. Pour remaining dressing mixture over salmon; cover. Refrigerate 30 to 60 min. to marinate. Drain; discard dressing mixture.

PLACE salmon on greased rack of broiler pan. Broil 2 to 4 inches from heat 6 min. on each side or until salmon flakes easily with fork, brushing frequently with reserved dressing mixture.

To extract the most juice from fresh lemons, bring them to room temperature. Then roll them firmly against the kitchen counter top with the palm of your hand before squeezing. This action ruptures the lemons' membranes, allowing more juice to be released.

This was excellent! Very flavorful; and the salmon was perfectly cooked. Completely moist. I had to use Balsamic Vinagrette (sp?) instead of the Caesar because the store was out of Caesar, but I don't even think I'll try it with the Caesar now. And it was so easy, I was actually talking to my brother on the phone while I was preparing it!

My husband and I never usually eat salmon because we thought it was always fishy tasting. We decided to give it a try again and we both LOVED it! Very satisfying meal!

Delicious. Couldn't get steaks, so I did this with filets. Because of this, I only broiled for 6 mins on the top rack, brushing marinade on every minute and a half or so. After 6 mins, turned off the broiler and left fish in the oven for another 3 mins, brushing marinade on two more times. Served with asparagus almondine, shrimp salad, and a bottle of chardonnay. Easy and delicious!

I had to use regular Caesar dressing, because I couldn't find the mix. Fish came out very flavorful, but alittle dry. My two year old son ate it, so I'll probably make it again, and maybe trim off alittle bit of the cooking time. All in all I'd say it was a decent meal.

Delicious. I also used Fillets instead of steaks and it was great and very easy. I will definitely make this again.

This was the tastiest salmon recipe that I have ever tried to make and it was better than anything that I have ever been served in a restaurant! It had lots of flavor and was done to perfection!

Definitely a great salmon recipe. I used filets instead of the salmon steaks because they were more readily available. I served it over a bed of lettuce with a little extra dressing. Worked out great.
