  • Heat oven to 400ºF.
  • Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
  • Place chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.
  • Top with stuffing mixture. Bake 30 min. or until chicken is done.

Substitute

Prepare using STOVE TOP Lower Sodium Stuffing Mix for Chicken.

Make Ahead

Prepare and bake recipe as directed; cool. Refrigerate up to 24 hours. To reheat, spoon each serving onto microwaveable plate. Microwave on HIGH 2 to 3 min. or until heated through.

Variation

Substitute 13x9-inch baking dish for the casserole dish.

Rated 5 out of 5 by from Made this for the first time tonight for my sister & her family. Made this for the first time tonight for my sister & her family. It was a HUGE hit!! I did make a few tweaks. I used chicken thighs instead of breasts (a little more fat but they don't dry out) and I cooked them in olive oil, garlic, Italian seasoning and seasoned Italian white wine vinegar prior to putting them in the baking dish. I used Italian seasoning instead of just basil in the stuffing mix. I used diced tomatoes w/green peppers & onions. I used extra cheese. I covered it w/aluminum foil & baked it at 375 for 15 minutes - uncovered it, sprinkled it with more cheese & baked it an additional 15 minutes. Delicious!!! Will be ****** it again for friends this weekend!

Rated 5 out of 5 by from Okay mine didn't look like the picture... Okay mine didn't look like the picture... but wow this tasted good. I made a few changes like using 1/2 cup more cheese during the layering and prob a 1/4 cup of cheese on top of the stuffing. I sauted the garlic (4 instead of 2) with a 1/2 onion in olive oil and added that to the stuffing in the beginning. And the other change was using probably 1- 1 1/2 tablespoon of dried basil. I was hesitant about this one but will definitely make this again at least once a month. It was easy and full of flavor!

Rated 5 out of 5 by from Made for the first time this evening and already a favorite with my husband. Made for the first time this evening and already a favorite with my husband. Didn't have basil so used chicken seasoning. Also added more cheese on top to give it a lovely, bubbly topping. Will experiment a little more next time with mushrooms (family favorite) and possibly green and/or red peppers. I also might add more stuffing since we all like it so much. Easy to fix, nice to look at , and delicious. Will try this for company soon.

Rated 5 out of 5 by from I just made this and in the middle of eating I said that I had to comment on this. I just made this and in the middle of eating I said that I had to comment on this. IT IS DELISH! I made a few tweaks - I marinated the chicken in a balsamic, Dijon and lemon juice marinade for two hours prior to baking. I added some more garlic all around and poultry and Italian seasonings to the stuffing to kick it up. I think the chicken would have been too bland if I didn't marinade. We like flavorful dishes and this hit the spot!

Rated 5 out of 5 by from Made this tonight & will make again. Made this tonight & will make again. Hubby does not like tomatoes but went back for seconds. Made as stated but used a can of fire roasted diced tomatoes and did not have mozzarella so used a cup of cheddar/provolone mix. Usually I change all recipes to meet my tastes, but honestly did not alter this one and it was a huge success. Will keep in my rotation for sure... tasty & economical!

Substituted Italian Diced tomatoes and used Stove Top Sage which added a little more spice and taste to it. Also added 2 cups of cheese and just mixed the chicken, cheese and basil together and then topped it with the stuffing. Helps to spray the pan with Pam in order to prevent it from sticking to the pan.

Rated 5 out of 5 by from This was amazing and so easy! This was amazing and so easy! I used a can of diced tomatoes w/garlic,basil,and oregano because that's all I had. For the cheese, I used 6 cheese Italian blend. After cooking for the 30 min, I added extra cheese to the top and let it cook an additional 5 min. to melt. I also used chicken tenders instead of breast. The entire family love it!

Rated 4 out of 5 by from This was delicious! This was delicious! It was so easy my hubby made it. We used the Basil, Garlic Diced Tomatoes. Also added extra garlic and pre-cooked the chicken ahead of time per all of the reviews about raw chicken. We did it on 350 for 35 mins and it was perfect. It wasn't dry and of COURSE extra cheese is always good!
