  • Heat dressing in large skillet on medium heat. Add chicken, peppers and garlic; cover. Cook 10 min. or until chicken is done (165ºF), turning after 5 min. Remove chicken from skillet, reserving peppers in skillet; cover chicken to keep warm.
  • Add canned tomatoes, water and rice to skillet; stir. Bring to boil; simmer, uncovered, on low heat 10 min. Meanwhile, combine cheese, fresh tomatoes and basil.
  • Return chicken to skillet; top with cheese mixture. Cook, covered, 5 min. or until chicken is heated through and cheese is melted.

Substitute

Prepare using KRAFT Zesty Italian Dressing.

Rated 5 out of 5 by from Wow! Wow! This was SOOO good! Since I never use instant rice, I didn't feel like buying it just for this recipe. If you'd like to go old school, simply use 1 cup of uncooked rice in place of the instant. Also, you'll need to simmer it covered for about 15-20 minutes instead of uncovered for 10 minutes. It added a few minutes to the total cooking time, but I don't mind, since it's something I always have on hand. I also didn't want to buy an entire bottle of salad dressing for just 1/4 cup, so I used some italian dressing I had on hand, adding about 2 Tbsp worth of chopped sun-dried tomatoes. I also used chicken breast tenders and dried basil with good results.

I returned the chicken to the pan into the tomato sauce, put the cheese and chopped tomato and basil on top of the chicken, covered it just to let the cheese melt. Then I spooned the rice onto the plate and spooned some tomato sauce over it, and put the chicken on top. I served Swiss chard with this. It made a very pretty plate. My husband said I should make it again.

Rated 3 out of 5 by from I made this dinner using an electric skillet. I made this dinner using an electric skillet. Be careful when "warming" the dressing & garlic. For some reason, the dressing burned to the non-stick skillet, so I had to scrap it off and start again. Other than that, it was VERY good! I used more of the dressing to put over the chicken while it was cooking. It was very tender afterwards! I suggest poking holes in the chicken to absorb the dressing.

I made the chicken bruschetta when it was distributed as a grilling recipe this summer (& have shared it w/several friends)...it was delicious! The chicken topping can be adjusted according to your taste - add olives, pineapple, hot peppers, whatever suits your pleasure! I can't wait to try it w/the rice - the side dish will already be ready when the chicken is done & only 1 pan to wash!

We had this tonight for supper and it was sooo tastey to the pallet:) I did add fresh mushrooms and green onions& green pepper as well. I cooked the chicken first with fresh ground black pepper and grailc for seasoning with olive oil and then fallowed the rest of the recipe.My husband really liked this tastey recipe and he hates white meat from a chicken.Will make this again for sure ~

The dinner was good and I would make this again, but I would cut several ingredients in half or more. I made it for 4 as the recipe said, but I have enough of the rice w/ canned tomato mix left for 10 more people. 1 cup of rice and one can of tomatoes would have been more than enough and I didn't even add fresh tomatoes after seeing how much was in the pan already.

My dad said that he would have preferred a little more garlic but that for a homemade meal that he did not have to make himself it was fantastic. I ate some of the skillet without a chicken breast and really liked the flavor of the cheese, basil, and tomato together.

It wasn't bad by any means, but to me, not as wonderful as everyone else thought. Maybe I screwed it up with my own little 'tweeks'? However, they were so small, I can't imagine that would have had that much of an effect. My husband liked, but I will not make again. :(
