  • Heat oven to 350°F.
  • Prepare cake batter as directed on package for 24 cupcakes, adding dry gelatin mix to batter before spooning into paper-lined muffin cups.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool cupcakes in pans 10 min. Remove to wire racks; cool completely.
  • Meanwhile, place coconut and food coloring in small resealable plastic bag; close bag and shake until coconut is evenly tinted.
  • Frost tops of cupcakes with COOL WHIP; top with tinted coconut. Arrange cupcakes, with sides touching, on serving tray. Decorate with marshmallows and jelly beans to resemble a bunny patch.

Substitute

Prepare using a yellow cake mix and your favorite flavor of JELL-O Gelatin.

Prepare, bake and cool cupcakes as directed, but do not frost with the COOL WHIP. Store in an airtight container in the freezer for up to 1 month. Thaw at room temperature, then frost and decorate as directed.
