  • Brown meat in large skillet on medium heat; drain. Stir in salsa and peppers. Bring to boil. Stir in rice; cover. Simmer on low heat 5 min.
  • Spread beans down centers of tortillas; top with meat mixture, cheese, lettuce and tomatoes.
  • Fold in opposite sides of each tortilla, then roll up burrito style. Serve with sour cream.

Keeping it Safe

Place ground beef in the coldest part of the refrigerator. Often, this is at the back of the refrigerator on one of the lower shelves. Ground beef should be used within 1 to 2 days after purchase, or freeze after wrapping tightly. Be sure to re-wrap the meat if the original package is damaged or destroyed. When thawing, place on the bottom shelf in the refrigerator to prevent drippings from cross-contaminating other foods.

I found this recipe 3 weeks ago the first time i made it i had 6 burritos left over so i froze them it's now been one week and i had to make them again last night because our supply ran out ;) We LOVE these burrito's i did add taco seasoning to the meat mixture w/ the salsa and a 1/2 cup water for the rice so it was not so dry. Great recipe though and an extra bonus leftovers freeze well and rewarms in the microwave really well also.

Very good recipe. the whole family loved it. i cut down the salsa i figured would be too spicy for younger kids. i cooked rice seperate since i cut down salsa. if you want to save the leftovers dont assemble them all. let each individual person assemble there own. the lettuce might go bad if you assemble it all. the lettuce is fine the next day if you save the ingrediants seperatley. definately would make it again yummmy.

It made enough for dinner and lunch the next day too! You can make it healthier with whole wheat tortillas, low fat sour cream, and lowfat cheese. I also added an onion to the meat while it cooked. I disagree about cooking the rice first. The salsa soaked into the rice to make it taste like Spanish rice. Thumbs up!

All of the ingredients complemented eachother very well. It tasted very gourmet and was inexpensived to make and in a slow economy, it is nice to be able to make delectable food at less than a fortune! I recomend this recipe to anyone who loves mexican food and to anyone who doesn't because they will just love it!

I thought the rice mixed in was fine - I didn't even notice it when I ate the burrito. It looked a little dry after letting the rice cook so I added some water to moisten it up a bit. I'm going to try freazing the leftover meat mixture.

I love Mexican, so the first time I made this and the rice was crunchy I was a little disappointed. I made it again this evening and cooked the rice mixture for 15 min. vs. the five, and it came out perfect. I added avacado to the burrito, and love it. Next time I am going to try the healthier suggestions. Loved it!!

It was quick and easy and there were no leftovers - hubby actually wanted more. I did cook the rice separately and added some taco seasoning to it then layered the burrito. I also substituted chicken for the ground beef.

I thought it did need a little more flavor so I added 1 tablespoon of taco seasoning. Another plus is that my husband really likes it and he likes the fact that this is something he can make.
