I don't like potato salad because I do not like the taste of mayo, so this version was perfect for me. It was very, very good. Surprisingly, my husband, the potato salad lover, didn't really care for it. I threw in some bacon bits-- yum! I would make this again-- great dish to bring to a party.

I have used several different types of potatoes in this recipe (cranberry reds being one of my favorites) and it turns out great everytime. It is a nice change from the traditional potato salad.
