  • Cook chicken in large nonstick skillet on medium-high heat 4 min. on each side or until lightly browned on both sides.
  • Add vegetables, pesto and water. Bring to boil. Cook on medium heat 6 to 8 min. or until chicken is done (165°F), stirring occasionally.
  • Sprinkle with cheese; cover. Remove from heat; let stand 5 min.

Substitute

For a heartier dish, use a frozen vegetable mix containing beans or potatoes.

For the effort (minimal) and expense (also minimal) delivered to this dish, my whole family found it exceptional. I truly thought it would be bland (I must admit Im a bit of a food snot) but it was not. Very flavourful, and lots of compliments tablewide. Will make again. I did use fresh veggies, cauliflower, broccoli, red pepper, and carrots, as well as homemade pesto. Thanks for a great recipe.

I've been trying recipes hoping that I would find some that "fit the bill." This one was absolutely delicious! I intend to make it often and pass it on to my friends. The DiGiorno Basil Pesto makes this dish one of the tastiest I've tried in a long time! It's an added bonus that it is also low calorie and low carb!!!!!

Rated 5 out of 5 by from I fudged the recipe a bit. I fudged the recipe a bit. Didn't have any pesto so, just made the filling like lasagna added parsley flakes and also tore up some fresch spinach and added in there. Went with skim ricotta chs and part skim mozzarella to make it a little healthier. I think I used more than 2 cups sauce, just used about 2/3 - 3/4 of a jar. Turned out delicious and good left over too!

The chicken itself needs seasoning so I added pepper, and garlic and onion powders. I did add extra pesto as well. The family actually liked the veggies better than the chicken and I think that's because each bite had enough pesto on it. So next time I will make it with smaller pieces of chicken.

I added some freshly ground black pepper and grated parmesan cheese and it was delicious. I used carrots, broccoli, canned sliced new potatoes and mushrooms and served it on top of brown rice. I will definitely be making this dish again.

I seen nothing spectacular about this and I won't be making it again. I personally didn't like the Pesto, my husband thought it was good so if I were to make it again I would season the chicken with pepper and garlic and bake it instead of frying it.

I added a little more pesto and water, oh and I used fresh red potatoes and broccoli (steamed them lightly first). To be honest, this dish when you use a little more pesto, doesn't even need the cheese.

Rated 4 out of 5 by from Very good- a great one-pot meal. Very good- a great one-pot meal. I made this for 2 using 2 chicken breasts and adjusting the pesto, water. I added canned potatoes as well and used the frozen California mix of veggies. This was another great way to get my husband to eat veggies.
