Changes I made/would make/recommend: I didn't have a lemon to zest, so I put the mayo in a bowl and mixed in a tiny bit of lemon juice--next time, I'll add more lemon. Also, instead of layering the basil on the sandwich, as shown, I think I'd like to tear it up a bit and mix it in with the lemon-mayo and spread it all on together. I also threw the whole thing in the microwave for a few seconds (I think 10 is about right) just to melt the cheese. I'm thinking maybe do this to melt, then add the condiment mixture after, so that stays chilled. Overall, a good combination of flavors.
