  • Place ricotta cheese, sugar and almond extract in food processor; cover. Process until smooth. Set aside.
  • Sprinkle gelatine over cold water in saucepan; let stand 1 to 2 min. Cook on low heat until gelatine is completely dissolved, stirring constantly. With food processor running, gradually add gelatine to ricotta mixture through feed tube at top of food processor, processing until well blended. Spoon into medium bowl. Reserve 1 Tbsp. of the chocolate chips for garnish. Add remaining chocolate chips and the yogurt to ricotta mixture; stir gently. Refrigerate 30 min. or until thickened.
  • Spread 2 Tbsp. of the ricotta mixture onto each graham square. Stack grahams. Stand on edge on serving platter to make a 14-inch loaf. Frost with the whipped topping. Top with the reserved 1 Tbsp. chocolate chips. Refrigerate at least 4 hours or up to 24 hours. Cut diagonally into 14 slices to serve. Serve leftover dessert in refrigerator.

This recipe looked so good, but I was really disappointed with the blandness of flavor. I used all the ingredients with one change. I used vanilla extract instead of almond extract. Could that have changed the flavor THAT much that it would ruin this recipe and make it bland? I'll check through the other reviews to see if there are any good alternatives to this recipe. If I can't find any good alternatives, then I probably won't be making this recipe again. Although, I will definitely try other cannoli recipes found on kraftfoods.com. Hopefully they are as good as they look!

Rated 5 out of 5 by from This was awesome! This was awesome!!! Everything about it was great! I, being a health freak, thought it was great to see a good, flavorful, low fat recipe. I did add a few extra tablespoons of chocolate chips though, just for a bit of added flavor. One other thing I did was I just spread the graham crackers on the bottom, put the mixture on top, added another layer, etc... All in all- this was fantastic and a definate "make again"!

Rated 5 out of 5 by from my family loves cannoli's so this was great. my family loves cannoli's so this was great. i followed the suggestions of the other ratings and layered the graham crackers and the cheese mixture. i also added more chocolate chips, almond extract and pistachios. it gave a bit more of a classic italian dessert taste. plus it looked pretty with the green...(^: my family is demanding i do this again.

Rated 5 out of 5 by from fabulous! fabulous! i did add 1 1/2 teaspoons of almond extract, and just a few more chocolate chips than the recipe calls for. the ricotta mixture soaks into the graham crackers so it tastes like something home-baked and DELICIOUS! its fun to make, too

Rated 5 out of 5 by from i have made this many times, and the last time i made it with fresh raspberries rather than the... i have made this many times, and the last time i made it with fresh raspberries rather than the chocolate chips and it was amazing. i love this dessert, and usually add extra almond flavoring to make it more flavorful.

Rated 1 out of 5 by from Yuck, this is a waste of good ingredients. Yuck, this is a waste of good ingredients. The flavor was bland and the texture was unpleasant. I looked up the recipe for pineapple icebox cake in the original knox cookbook and wow, what a world of difference.
