  • Dissolve instant coffee in combined juice and vanilla. Gradually add to marshmallow creme in small bowl of electric mixer, beating on low speed until well well blended. Add wafer crumbs, pecans and zest; mix well.
  • Shape into 1-inch balls; roll in combined cocoa and powdered sugar until evenly coated. Place in single layer in shallow pan; cover tightly.
  • Refrigerate several hours or until firm. Store in tightly covered container in refrigerator.

Substitute

Substitute additional finely chopped PLANTERS Pecans, or chocolate sprinkles for the cocoa and powdered sugar.

The recipe calls for 1 Tbsp orange zest, only use this much if it is fresh, otherwise a tsp of dried orange zest is plenty. They taste the best a day or two after they've been made. Mmmmm, coffee deliciousness.

I even tried rolling them in the General Foods International coffees, and they were still really bad. I would not make truffles again with marshmallow creme as one of the main ingredients.
