We used better-for-you ingredients to make creamy caramel-vanilla pudding with sweet cream cheese topped with apples and nuts a smart way to serve dessert.

What You Need

 reduced-fat vanilla wafers, finely crushed (about 1-1/2 cups)
cup  soft margarine, melted
pkg.  (8 oz.) PHILADELPHIA Fat Free Cream Cheese, softened
Tbsp.  SPLENDA® No Calorie Sweetener, Granulated
cups  cold fat-free milk, divided
tub  (8 oz.) COOL WHIP Sugar Free Whipped Topping, thawed, divided
pkg.  (1 oz. each) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
cup  sugar-free caramel ice cream topping, divided
 each red and green apple, chopped
cup  PLANTERS COCKTAIL Peanuts, chopped

Make It

MIX wafer crumbs and margarine; press onto bottom of 13x9-inch pan. Beat cream cheese, SPLENDA® Granulated and 1/4 cup milk with mixer until well blended. Stir in 1 cup COOL WHIP; spread over crust.

BEAT pudding mixes and remaining milk with whisk 2 min. Stir in 1/4 cup caramel topping. Spoon over cream cheese layer; top with remaining COOL WHIP.

REFRIGERATE 8 hours or until firm. Top with apples, nuts and remaining caramel topping just before serving.

Makeover - How We Did It
We took a favorite recipe and made some simple changes that will save you 140 calories and 9 grams of fat, including 6.5 grams of saturated fat, per serving. We reduced the amount of NILLA Wafers and used margarine instead of butter. In addition, we used fat-free milk, COOL WHIP Sugar Free Whipped Topping, JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding and sugar-free caramel ice cream topping instead of full-fat products. These small changes make this dessert better for you without sacrificing the flavor.
Keep Apples from Turning Brown
After cutting the apples, minimize browning by dipping them in 1 cup water mixed with 1 Tbsp. lemon juice before adding to dessert.
Dessert can be stored in refrigerator up to 24 hours before adding toppings just before serving.
