  • Preheat the oven to 350ºF. Line two baking sheets with parchment; set aside.
  • In a large bowl or the bowl of a stand mixer, beat sugars and butter until light and fluffy. Add the vanilla and egg, and beat until smooth. Add 1 cup of flour, and the baking powder, baking soda, salt, and oats, and mix until combined. Toss the chopped apple pieces with the remaining tablespoon of flour. Gently fold the apples and caramel bits into the dough.
  • Scoop the dough into one inch balls and place on the prepared baking sheets. Bake 10-12 minutes, or until light golden brown.

Rated 1 out of 5 by from Confusing recipe These cookies look delicious but the recipe is confusing and I don't want to guess and waste ingredients. It calls for 1/2 butter. Is that 1/2 stick, 1/2 cups ( which is 1 stick) or 1/2 pound ( which would be 2 sticks. Also it calls for 1 1/2 cans of oatmeal. I assume that is suppose to be cups. I had to give this at least 1 star or it wouldn't post.

Rated 5 out of 5 by from Caramel apple pie in a cookie I made these today and they are FANTASTIC! Like a tiny caramel apple pie in your mouth. Once baked, make sure you put them on something nonstick as the caramel will ooze out on the bottom and stick to everything. I did not alter the recipe in the slightest. New family favorite.
