  • Heat oven to 375°F.
  • Spray 8-inch-square baking dish with cooking spray; cover bottom of dish with 5 bread slices, cutting as necessary to fit.
  • Slice 1 banana; arrange over bread slices in dish. Cover with remaining bread slices.
  • Beat eggs, milk and dry pudding mix in medium bowl with whisk 2 min.; pour over bread.
  • Bake 30 to 35 min. or until top is golden brown and knife inserted in center comes out clean. Cool 5 min.
  • Slice remaining banana; arrange over French toast. Sprinkle with sugar.

Rated 3 out of 5 by from Seemed more like bread pudding? I could not find caramel pudding mix so used butterscotch instead. I think making the two layers and putting it in such a small dish made my bottom layer turn out under cooked and mushy. I would advise to use a 9x13 pan instead and make only one layer with the ten slices so they all can cook well and brown in the oven.
