Caribbean Meatloaf

Serve up your next meatloaf Caribbean-style, with red pepper slices, creamy dressing and a topping of melty VELVEETA.

What You Need

1
 egg, beaten
1-1/2
lb.  lean ground beef
1
small  onion, finely chopped
1/4
cup  KRAFT Lite Thousand Island Dressing
1/4
cup  crushed saltine crackers
2
Tbsp.  OSCAR MAYER Real Bacon Bits
1
  red pepper, cut into thin strips
1/4
lb.  (4 oz.) VELVEETA®, cut into 1/2-inch cubes

Make It

HEAT oven to 400°F.

MIX first 6 ingredients.

PRESS half the meat mixture onto bottom of 9x5-inch loaf pan. Top with peppers and VELVEETA, spreading to within 1/2 inch of edges. Cover with remaining meat mixture.

BAKE 45 to 50 min. or until done (160°F). Let stand 5 min. before slicing.

Keeping it Safe
Follow these safety tips when serving leftover meat loaf. If you opt for cold sandwiches, remove the meat loaf from the refrigerator just before you prepare the sandwiches, then serve them immediately. If you reheat the meat loaf, make sure that it is heated through, with an internal temperature of at least 165°F when tested in center with an instant-read thermometer.
