Rated 5 out of 5 by from This recipe was absolutely delicious. This recipe was absolutely delicious. Everyone wanted two peices, so I would definitely double the recipe ;) However, for the side dishes, I would scratch the above suggestions. We served steamed zuchinni and yellow squash, and simple white rice. I gave everyone plenty of lime wedges for the fish, and sprinkled chopped cilantro and a spritz of lime juice on top of the rice right before serving. Delicious, great for summer, and obscenely easy. ;)

I added a little extra peanut oil to bring out the flavor of the nuts and substituted the brown rice with white rice cooked with lime juice and cilantro.
