Look for shredded carrots in the produce section of your supermarket. If the shreds are too large, just chop them before using as directed. You will need about 1 cup.

These were a hit at a mother's day tea! They were a little difficult to get to stay wrapped up so well, but I found they did better if I chilled them really good before I cut them.
Simple and tasty. For kid friendly alternatives, instead of onions try adding in some finely chopped sundried tomatoes or some raisens. Adds a nice sweetness. And for dairy free, spread the tortilla with your favorite flavored hummus instead of cream cheese.
