  • Use vegetable peeler to peel carrot into 24 long thin ribbons.
  • Top each carrot ribbon with 1 each cheese strip and tomato half; roll up. Secure with toothpicks, if desired.

Variation

Substitute a zucchini or yellow squash for the carrot and/or cherry tomatoes for the grape tomatoes.

Note

When cutting the carrot ribbons, apply more pressure than you normally would to peel the carrot into the long thin even slices.
