What You Need

small onion, chopped

1/4

cup KRAFT Lite House Italian Dressing

lb. carrots, peeled, chopped

cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth

1/4

tsp. ground cumin

1/2

cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream, divided

PREMIUM Saltine Crackers

Make It

COOK and stir onions in dressing in large saucepan on medium-high heat 5 min. or until onions are tender. Add carrots, broth and cumin; mix well. Cook 10 min. or until carrots are tender, stirring frequently. Cool slightly.

BLEND broth mixture in blender container until pureed. Add 1/4 cup sour cream; blend until smooth.

LADLE soup evenly into 4 soup bowls; top each with 1 Tbsp. of remaining sour cream. Serve with crackers.

Make it Easy

Substitute a 1-lb. bag of peeled baby carrots, cut in half, for the chopped large carrots.

Special Extra

This soup is also great served chilled. Just prepare as directed, then cover and refrigerate until ready to serve.

When to Peel Carrots

If carrots are young and tender, not old and woody, there's no need to peel them. Simply scrub them well with a vegetable brush, then use as desired.

I made this yesterday, it was ok, but kind of sour instead of sweet. Wouldn't make it again though, unless I would change some ingredients.

Not sure if it was the recipe or just that I don't like carrot soup period but this isn't something I'll make again.

The dressing used as a base gave it a sour taste, rather than most carrot soups that are sweeter. It didn't taste bad, but it wasn't great either!

Very easy and satisfying. I garnished mine with dill weed.

It was ok but not a favorite maybe with a little nutmeg. Im not sure that I would make it again.
