Substitute a 1-lb. bag of peeled baby carrots, cut in half, for the chopped large carrots.
If carrots are young and tender, not old and woody, there's no need to peel them. Simply scrub them well with a vegetable brush, then use as desired.

I made this yesterday, it was ok, but kind of sour instead of sweet. Wouldn't make it again though, unless I would change some ingredients.
Not sure if it was the recipe or just that I don't like carrot soup period but this isn't something I'll make again.
