  • Heat oven to 350ºF.
  • Cook cauliflower in boiling water in large saucepan 4 min.; drain well.
  • Melt 2 Tbsp. butter in large saucepan on medium heat. Add onions; cook and stir 3 min. or until crisp-tender. Stir in flour and mustard; cook and stir 1 min. Whisk in milk; cook 5 min. or until thickened, stirring frequently. Remove from heat. Add 1-1/2 cups cheddar and 3 Tbsp. Parmesan; stir until cheddar is melted. Add cauliflower; stir to evenly coat. Spoon into 2-1/2-qt.casserole sprayed with cooking spray.
  • Microwave remaining butter in medium microwaveable bowl on HIGH 30 sec. or until melted. Stir in bread crumbs and remaining Parmesan; sprinkle over cauliflower mixture.
  • Bake 20 to 25 min. or until heated through, topping with remaining cheddar for the last 5 min.

It was good but not great. Also when you state that the prep time is 20 minutes, you're not including cutting up the cauliflower. So unless, you're Rachel Ray with everything prepared & waiting, the actual prep time is closer to an hour. Had difficulty finding the cheese with a touch of Philly. Had to use just the shredded Triple Cheddar. Would that have made a huge difference? Also said divided for the Cheddar but never figured out what I was supposed to do with the remainder. Don't think I'd make this again.

Rated 4 out of 5 by from Wish this recipe were truly low carb Lots of people are like me are on a ketogenic diet and don't eat foods with sugar or starches in them. We can't use this recipe, because of the flour and panko bread crumbs. My suggestion is, if you're going to create low carb recipes, create ones that are truly low carb and don't have hidden carbs in them like this one. I didn't use the flour or the panko, and it still tasted delicious.

Rated 3 out of 5 by from It Has Potential As the recipe is written , it's pretty bland. I added salt, pepper and seasoned salt and it was still needed something else, maybe garlic power. The recipe has potential, just needs work.

Rated 5 out of 5 by from Delicious I never liked cauliflower, but someone gave me a bag full and I had to do someting with it and just happened upon this fabulous recipe and had to try it. Was pleasantly surprised how simple and tasty it was. I gave some to a couple friends who did not eat cauliflower also and they loved it.
