  • Use pulsing action of food processor to process half the cauliflower until coarsely chopped; spoon into large bowl. Repeat with remaining cauliflower.
  • Heat oil in large nonstick skillet on medium heat. Add cauliflower; cook 8 to 10 min. or until lightly browned, stirring occasionally. Add taco seasoning, sauce, 2 Tbsp. cilantro and 1 tsp. lime juice; mix well. Cook 1 to 2 min. or until heated through and slightly thickened, stirring frequently. Remove from heat.
  • Toss carrots with remaining cilantro and lime juice.
  • Spoon cauliflower mixture onto tortillas; top with carrot slaw. Roll up.

How to Warm the Tortillas

Wrap stacked tortillas in paper towels. Microwave on HIGH 1 min. or just until warmed.
