I have made this 2 different years plus a dietitian FRIEND has made it and the jam has NOT jelled for either of us.
For the second year in a row, I have followed the directions for Cooked Peach Jam using Certo and the fruit has risen to the top of the jar. The taste is okay, but the appearance is not giftable.
