I make this jelly to sell at a farmers market, and I use it myself. It is perfect. Some of my customers buy it for gifts. I buy unsweetened pineapple juice to make up the difference in volume. I also make it in a sugar free,using Splenda ans Sure Jell no sugar needed pectin. Both ways it comes out great.
Unusual taste for a jam but very good if you want something different. Very tasty. It will be even better in the winter when everyone will want a taste that reminds them of sunshine!! I used canned pineapple and put it through a food processor. If you do this, be careful..liquify it just slightly or you will get too much foam. Cutting through a fresh pineapple is a lot of work plus very messy...if you do it my way you'll have more fun!
