This is SO good! My husband and I are huge ceviche fans, and this hits the spot (not to mention is super easy to make!). I season my avacado mixture with sea salt, pepper, cumin, and chili powder just for a little extra flavor. I accidentally left off the shredded cheese, but it was never missed. I don't even think I'll use it from now on. Great recipe!
Excellent and unique! I used guacamolie to subtsitute the avacado.
