  • Heat oil in large skillet on medium-high heat. Add next 5 ingredients; cook and stir 5 min. or until vegetables are crisp-tender. Stir in tomatoes and water. Bring to boil.
  • Add rice and hot sauce; stir. Cover. Remove from heat. Let stand 5 min. or until liquid is absorbed; stir.


Prepare using instant brown rice.

    This is delicious. I only had long grain rice, so I used 1 cup of that, instead of the 2 cups of instant rice. It was wonderful. I thought 1 tablespoon of hot sauce might be too much, but it is perfect! I served this with a Carolina barbecue pork and it was a hit.
