Yum! This recipe is great because you can tailor it to your families taste. I used red pepper and red onion as well as only half of a tomato. Also, I seasoned the chicken and cut into cubes and used an olive oil balsamic ving. dressing to brown the chicken. Note, it does take about 10 min for the rice to cook. (I reduced the rice to one cup as well, but did not alter broth amount)Hubby said it was delicious!!
