  • Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 min.
  • Stir in rice, broth and peppers. Bring to boil; cover. Simmer on low heat 5 min. or until chicken is done and rice is tender. Let stand, covered, 5 min. or until liquid is absorbed.
  • Add tomatoes, cheese and onions; mix lightly.

Special Extra

Sprinkle lightly with black pepper or top with a few dashes of hot pepper sauce before serving.

Substitute

Substitute 2 cups small broccoli florets for the green pepper strips.

This is the first recipe I tried off Kraft Foods and it definitely gave me a good impression of the site! It was very easy to do, quick, and the flavor is great. The recipe calls for the perfect amount of cheese and chicken, the only thing I would say is that it takes about 10-12 minutes to soak up all the liquid, not 5. I ended up putting the heat on for a bit longer after everything was done just to get all the liquid out, but when I was said and done I was very happy with the end product.

Cooking the chicken with the dressing gave it a really good flavor and made it very tender. I did use white rice because that's all I had, but I would try the brown rice. I also added some chopped onion in with the chicken and some pepper and garlic powder. With a salad and some dinner rolls it made a great meal that both my young boys loved. Will make this one again

I really enjoyed making this dish, I even told my girlfriend about it and I made it at her house one night and she really enjoyed it. Now she plans to make it for her family. I love Kraft.com and the book I receive in the mail. The recepies are great and they are so easy and kid friendly. Keep up hte good work and God bless.

Rated 5 out of 5 by from Yum! Yum! This recipe is great because you can tailor it to your families taste. I used red pepper and red onion as well as only half of a tomato. Also, I seasoned the chicken and cut into cubes and used an olive oil balsamic ving. dressing to brown the chicken. Note, it does take about 10 min for the rice to cook. (I reduced the rice to one cup as well, but did not alter broth amount)Hubby said it was delicious!!

Rated 3 out of 5 by from This was good, it needed more seasoning. This was good, it needed more seasoning. I liked the idea of everything in the same skillet and it was healthy. I used a red pepper and a few handfuls of fresh spinach for some extra vegetable but I had to add salt and a few shots of hot pepper brought it to life. If you make this for two people you can have enough for 2 meals. I may freeze some of my leftover.

It was very tastey. It did turn out a little to watery for me but I just drained some of the juices off. Maybe it was because I used frozen brocolli and long grain brown rice non instant. And I added red peppers. I will definantly make this again.

When I personally use a recipe, I don't follow it 100% exactly and this time was no different. I used a standard can of chicken broth and I added the onion to be cooked with the broccoli, not at the end. And instead of instant rice, I used white rice and just simmered longer (15-20 mins). My picky husband even enjoyed this!

Rated 3 out of 5 by from This was good but not great. This was good but not great. I didn't add the tomatoes or green onions and I used white rice instead of brown rice. Like the other post stated, this does not keep well. The peppers will be soggy and won't heat up well. I picked them out and just reheated everything else. It was OK but better the first time around.
