  • Spray large skillet with cooking spray. Add chicken; cover. Cook on medium-high heat 2 to 3 min. on each side or until browned. Remove from skillet.
  • Add vegetables and water. Bring to boil.
  • Stir in stuffing mix just until moistened. Top with chicken and cheese; cover. Cook on low heat 5 min. or until cheese melts.

I'm glad I substituted chicken broth for the water, though. I think it would have been pretty bland otherwise. Also, you may want to salt and pepper your chicken before you cook it for some extra seasoning. (All those frozen veggies have no seasoning, so you need to add it elsewhere to make up for that) Also, I browned my chicken in olive oil rather than using cooking spray. All in all, I would definitely make this again for a quick dinner.

I loved the idea of mixing the stuffing mix together with the mixed veggies, since they aren't our very favorite veggies, but with the stuffing, they were really delicious! The next time I make this I think I will simmer the veggies a little longer and I will add some chicken broth with the stuffing mix for extra moistness. Everything gets so dry here in CO.

I think next time, I would replace some of the water with one of their bottled dressings (italian, tomato basil etc). That would give it a kick!

I think it would be great if the cheese was left out and a sauce or gravy could have been added. Maybe it's just my person preference or taste buds, but I liked it enough to eat all of it.

Luckily I decided to add some garlic and crushed pepper to this recipe and it gave it some flavor...other than that it would've been extremely bland. Other than that, it was very easy and can be changed with various flavoring choices.

Rated 5 out of 5 by from I made it and loved the simplicity of it. I made it and loved the simplicity of it. I used chicken tenderloins to shorten the cooking time. The whole meal turned out wonderfully. My husband loved it too and suggested that it would be a great meal to take for potlucks!
