Gougeres can be made ahead of time. Cool completely. Freeze in single layer in shallow pans. Once frozen, store in airtight container up to 1 month. When ready to serve, reheat in 375°F oven 8 to 10 min. or until gougeres are heated through. No need to thaw first.
For faster prep and equal-size gougeres, use small tablespoon-size ice cream scoop to portion the dough for each gougere.
