  • Cook potatoes in boiling water in large saucepan 20 min. or until tender; drain. Return to pan.
  • Heat oven to 350ºF. Add butter and sour cream to potatoes; mash until smooth. Spoon half into 1-1/2-qt. casserole sprayed with cooking spray; cover with layers of cheese, remaining potato mixture and bacon.
  • Bake 30 to 35 min. or until heated through.

Serving Suggestion

Serve with your favorite cooked lean meat, fish or poultry.

How to Make the Potatoes Creamier

Add 2 Tbsp. milk to the drained cooked potatoes along with the butter and sour cream.

Note

If cooking the potatoes in a nonstick saucepan, transfer the drained cooked potatoes to a large bowl before mashing as directed. Mashing the potatoes in a nonstick pan could damage the nonstick coating in the pan.

Rated 5 out of 5 by from I made a few tweeks to the recipe based on what I had. I made a few tweeks to the recipe based on what I had. I used red potatoes and left the peel on. I also used shredded hot pepper cheese (which is pretty much white with bits of color) instead of cheddar. Next time I will try the cheddar so that I can see the contrasting orange color like the picture shows. Oscar Mayer center cut thick sliced bacon is the best so I used that to top. I also added salt and pepper for flavor. Since I did not have a mashed potato whipper, I just mashed the potatoes so it was more of a smashed potatoes than mashed. So next time I will make them more mashed. But otherwise delish! You can't go wrong with loaded mashed potatoes!

My brother and Fiance were asking for more, I used a whole bag of potatoes, and i just eyeballed the ingredients, and nothing beats like real crisped bacon crumbles on top and extra sharp cheddar cheese, i might try thr super extra new york white cheddar. You can incorporate chives, or herbs, or peas in the potatoes

Rated 5 out of 5 by from We loved this! We loved this! I seasoned the potatoes with pepper,onion powder .garlic powder and a touch of salt since the bacon is salty. I also have fresh chives so I chopped and added those. I think you could easily take the basic recipe and change it to your liking. Don't pass it up due to bland reviews...my grandkids loved it also.

I added the milk and pepper to the potatoes while mashing thinking that would keep them from being bland but it did not I am sorry to say.

Rated 5 out of 5 by from We love mashed potatoes! We love mashed potatoes! I made them my usual way with 8 oz cream cheese, 1 c. sour cream,1 stick butter, a little milk, salt, and pepper. A bit of onion powder is a good add in also. Then I did the layering. Great!

I made this receipe on the Monday before Thanksgiving and my husband loved it so much that he told me I had to make it for Thanksgiving Dinner. YUMMY! Very easy to make, and I used more bacon. Everyone loved it.
