Four generations of my family used to make a very tasty and easily spreadable homemade pimento cheese recipe with Velveeta. Now Velveeta is so mushy that it clogs the food processor and you even can't grate it by hand. Nasty gooey mess!!!!

Rated 5 out of 5 by from Excellent! Excellent! I added a little salt and pepper, and garlic powder. I didn't have pimentos on hand, but I did have roasted red peppers which work just as well. I think next time I might try a blend of cheeses such as some Parmesan and pepper jack. This recipe is a keeper!
