Excellent! I added a little salt and pepper, and garlic powder. I didn't have pimentos on hand, but I did have roasted red peppers which work just as well. I think next time I might try a blend of cheeses such as some Parmesan and pepper jack. This recipe is a keeper!
This pimento cheese spread is delicious! My guests loved it! I used a hand mixer to blend the cheese mixture and it came out creamy and easy to spread.
