To prevent the dumplings from becoming tough or heavy, do not overmix the dough. Also, to prevent the dumplings from sticking together, use a large enough pan to allow space between the dumplings as they cook in the boiling water.
Instead of cooking the dumplings in boiling water, you can instead drop the dumpling dough into your favorite soup or stew. Just add tablespoons of the dough into the hot soup for the last 15 to 20 min. of the soup cooking time, keeping the pan covered while the dumplings cook.
For more flavor, cook the dumplings in 1 qt. (4 cups) chicken broth instead of the boiling water.
