What You Need

loaf (1 lb.) Italian bread, cut into 12 slices, toasted

1/2

cup pesto

plum tomatoes, cut into 6 slices each

pkg. (8 oz.) CRACKER BARREL Extra Sharp Cheddar Cheese, cut into 24 slices

Make It

SPREAD toast slices with pesto; place on baking sheet.

TOP with tomatoes and cheese.

BROIL 2 to 3 min. or until cheese is melted.

How to Ripen Tomatoes

Place tomatoes with an apple in a paper bag pierced with a few holes. Let stand at room temperature for 2 to 3 days or until tomatoes are ripened.

Creative Leftovers

Store any leftover pesto in refrigerator up to 4 days. (Do not freeze.) Serve over your favorite hot cooked pasta.

Delicious as a quick snack or appetizer. Also great to spice up your plain ol' grilled cheese as well!

I kinda changed up the recipe some by using wheat pita bread,sundried tomatoes and pesto,it came out really good!!!!!!

Made this for my whole family at the beach this past weekend. Everyone LOVED it!! It will become one of our favorites to make frequently. (My husband added deli turkey to his and loved that too)

Very easy prep and they turned out very yummy! I cut them in half before serving at my party,too, and found that the half-size was better for people to just pop in their mouths. I was skeptical of the cheddar cheese with the pesto (I would have thought mozzarella or parmesan would be better), but I have to say that the flavors really compliment each other.

The BEST appetizer ever! I make it for every event and everyone wants the recipe. Everyone specifically asks me to bring these to gatherings.

loved this toast, I did not add pesto. I tried it without and it is very good.Almost had a meat texture to it. Great for in between meals.

I switched it up a little... I did it with shredded mozzarella and without the tomatos. HUGE thumbs up from my dinner companions.

I went to a party at my friend's house. She had made these and EVERYONE commented how great they were. She cut each toast in half before topping them. They were the perfect size for party fare. I plan on serving these at my next party.
