  • Beat cream cheese and sugar with mixer until blended. Stir in COOL WHIP.
  • Cover bottom (flat) side of each of 10 cookies with about 2 Tbsp. cream cheese mixture; top each with second cookie to form sandwich. Dip half of each sandwich in chocolate; gently shake off excess chocolate. Place in single layer in airtight container.
  • Freeze 3 hours or until firm.

Fun Idea

Prepare as directed, rolling or lightly pressing edges of sandwiches in colored sprinkles, miniature chocolate chips, chopped PLANTERS Nuts, BAKER'S ANGEL FLAKE Coconut or small candies before freezing.

Creative Leftovers

Store leftover chocolate in refrigerator up to 2 weeks. To remelt, follow directions on label. Use as a dip for additional chocolate chip cookies, other varieties of cookies, cut-up fresh fruit or cake cubes.

Substitute

Substitute 6 squares melted BAKER'S Semi-Sweet Chocolate for the tub of dipping chocolate.

Rated 3 out of 5 by from I thought that this was a great recipe to make with kids. I thought that this was a great recipe to make with kids. I added a 1/4 tsp vanilla to the cream cheese and sugar before beating it with the mixer. Once the cookies were filled with the cream cheese mixture I placed the cookies in the freezer for about 30 minutes to set up before dipping them in the chocolate. I thought that the dipping was a little messy and I think next time I am going to drizzle the chocolate over the top of the cookies. I will still set them up in the freezer because it made it much easier to eat.

Rated 2 out of 5 by from Thought it was good not great. Thought it was good not great. The cheesecake filling did not really have any taste. I added some vanilla but the kids still thought it was bland. Also, it was difficult to dip the filled sandwiches into the chocolate. The filling would seep out into the chocolate. If I was to make it again I would freeze the sandwhiches for awhile before I dipped them. I also used dark chocolate instead of milk chocolate.

This was really easy,also very rich and tasty.I used chewy chips ahoy cookies and used 2 heaping tbsp.of powdered sugar and a few drops of vanilla instead of the regular sugar.I think this made it fluffier.I also froze them first and instead of dipping half the cookie in the melted chocolate,I spooned it over the entire top of the cookie so there was chocolate in every bite.They were awesome and a sure keeper.

I used Philly cream cheese and a different brand of chocolate chip cookie (I thought they might be a little larger but they weren't) and made one dozen cookie sandwiches. They were just sweet enough and everyone enjoyed them. They were really easy to make and I'm sure I will make them again sometime.

I made homemade chocolate chip cookies (1000x better than store-bought) and put in the filling thicker than what it called for. Loved it!!! It is much easier to dip the cookies in the chocolate (I just melted Baker's semi-sweet choco squares with a little butter) after the sandwiches have been chilled for several minutes in the freezer.

I found it difficult to spread the cheesecake mixture into the sandwhich, so I put the mixture into a big plastic bag and cut off the tip, and used it as a pastry bag. This way I was able squeeze the correct amouont out onto the cookie. It worked great! I also dripped the remaining chocolate onto the top of the cookies! Simple and YUMMY!

I increased the recipe, using the whole tub of cool whip and brick of cream cheese - this is enough filling for 3 bags of cookies. Using a small sized scoop (like pampered chefs) makes adding the filling easy and gives you a perfectly sized filling portion. I will definitly make these again!

This recipe is very good but I am surprised that they do not recommend freezing the sandwiches BEFORE dipping. If you do not, they will be a squishy mess. So make them, freeze, then dip the next day when they are frozen. Much better results, don't they have a test kitchen so I don't have to go through this?!?
