Serve with fresh fruit and a whole wheat English muffin to round out the meal.

Rated 4 out of 5 by from Just made this, very easy, delicious and low carb. Just made this, very easy, delicious and low carb. Did not stick to the baking dish at all, not greasy either. I substituted green bell pepper for the onion, it was great! My husband was very impressed and is looking forward to having it again. Would be nice cold for lunch the next day too.

Rated 5 out of 5 by from My husband and I really liked this dish. My husband and I really liked this dish. It came out very fluffy and you can add other ingredients to suite your taste. I sauteed some onion and red bell pepper this time. Next time I wouldn't mind adding other veggies. Add a little salsa or hot sauce on the side - delish!
