  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet.
  • Add vegetables to reserved drippings in skillet; mix well. Cook 10 min., stirring frequently. Spread onto bottom of 13x9-inch baking dish sprayed with cooking spray.
  • Whisk eggs in medium bowl until blended; stir in sour cream. Pour over vegetable mixture, spread to completely cover vegetable mixture. Top with bacon and VELVEETA.
  • Bake 40 min. or until center is set.

Rated 1 out of 5 by from The photo does not match the recipe. The directions do not clarify if the hash browns are frozen or thawed. The green pepper is not visible in the photo but there is broccoli that was not mentioned in the list of ingredients or directions. Is this fresh or frozen broccoli? The response to one reviewer was rude--follow directions as written, is a pretty curt way to avoid a little research and correction. It really reflects poorly on the company.

I see broccoli in the picture, but it's not listed in the ingredients. I have not made this recipe yet, just because it seems like whoever made it or posted doesn't seem to care about the folks that read it and plan to make it.

Rated 1 out of 5 by from I printed this recipe, and thought I downloaded the wrong one. It shows broccoli in the picture, but it doesn't state how much to add. It looks like frozen broccoli. I seems that this recipe was not written out in full. I am adding a cup of frozen broccoli florets. I will test this out over the weekend.

Rated 5 out of 5 by from Family loved it. My family loved it. Made it for Christmas breakfast. Don't look at the picture if it is still there. Follow the recipe - peppers and mushrooms. I thawed the potatoes a little before putting in the skillet with the other veggies. Will definitely make this again.
