  • Cook and stir chicken in large skillet sprayed with cooking spray on medium-high heat 4 to 5 minutes or until cooked through.
  • Stir in rice, barbecue sauce and water. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes or until liquid is absorbed.
  • Add beans and 1 cup of the cheese; mix lightly. Sprinkle with remaining 1/2 cup cheese; cover. Cook until cheese is melted.

Substitute

Prepare as directed, substituting 1 lb. ground beef for the chicken.

Variation - Cheesy Vegetarian BBQ Skillet

Prepare as directed, substituting 1 pkg. (10 oz.) frozen whole kernel corn, thawed, for the chicken. Increase black beans to 1 can (15 oz.).

Rated 4 out of 5 by from i changed this recipie up a bit. i changed this recipie up a bit. i sauted onion, red and green peppers, and celery in olive oil . added chopped pre-cooked brats sausage, and pre- cooked chopped chicken breast. then did every thing eles the same, added the h20, bbq sauce, and rice- when it was done, it was very good!! i served it w coleslaw- my husband really liked it!!

In my house we'll eat almost anything with a little cheese or BBQ sauce. I loved this one pot meal so much that I have given the recipe to friends and co-workers. And it works great to reheat the next day for lunch. But the best thing is, one pot equals less mess.

I serve this with corn bread made from a mix, a big pitcher of iced tea and ice cream with cookies for dessert. Its one of my children's favorites.
