  • Preheat oven to 350°F. Mix beans, 1/2 cup of the salsa, 1 cup of the cheese and the onion until well blended.
  • Spread remaining 1 cup salsa onto bottom of 13x9-inch baking dish. Spoon 1/4 cup of the bean mixture down center of each tortilla; roll up. Place, seam sides down, over salsa in baking dish. Top with the remaining salsa and cheese.
  • Bake 20 minutes or until heated through.

Make Ahead

Prepare as directed, except for baking. Cover and refrigerate up to 12 hours. When ready to serve, bake, uncovered at 350°F for 30 minutes or until heated through.

Substitute

Substitute green onion slices for the chopped onion.

Rated 4 out of 5 by from This was super easy to make. This was super easy to make. My kids seemed to enjoy it. I added sliced black olives and used jack cheese because that is what I had on hand. The beans were really creamy from the cheese and salsa which made them really really good! =) I love Taco Bell brand beans anyway, but the non fat refried worked just as well. yum!

Would need more salsa or sauce to be really enchilada-like, but the opoint is that these are really good. I was able to make this with ingredients I had on hand. I used fat-free refried beans and KRAFT 2% Milk Cheddar cheese to cut fat and calories. A real keeper.

I made an enchilada sauce and poured it over the top of the salsa and also topped with extra cheese before baking. Came out fantastic - even my 2 year old ate these enchiladas - and could be easily adjusted with chicken, ground beef etc. to taste.

I will be making this again in the future. We added lettuce, sour cream, black olive slices, and tomatos to the top of ours as we fixed our plates. It was easy and fast to prepare!

I loved them, tasted like a baked burrito. I will definitely make them again for me. I added more cheese on top and when they had cooled a bit I put a dollop of sour cream on each. Very tasty.

Rated 4 out of 5 by from We really enjoyed this meal. We really enjoyed this meal. My 3 year old and my husband both liked it. (AMAZING) It was a very simple recipe and it can be modified to make it more you. You can change the salsa to the desired flavor. Really good meal and super quick.
